Endemic is a celebration of flavors, identity, and culinary roots featuring Michelin-starred chefs and traditional cooks

In Guanajuato, tourism is full of history, culture, and pride. From our traditional cuisines to the most avant-garde dishes, each dish speaks volumes about who we are.

The People’s Government, through the Secretary of Tourism and Identity, is strongly promoting the closing of the “Guanajuato ¡Si Sabe!” season with the launch of the 2025 Endemic Festival, a platform that recognizes indigenous cuisine, local talent, and the global potential of our endemic ingredients, interpreted by Michelin-starred chefs.

On July 25 and 26, 11 restaurants located in León, Guanajuato City, Irapuato, and San Miguel de Allende will be transformed into culinary venues that merge tradition and haute cuisine.
Here, traditional cooks will share the stove with chefs from Guanajuato and some of the most important names in world gastronomy, such as Carlos Gaytan, Mikel Alonso, Rodrigo Rivera Rio, David Castro Hussong, Alfredo Villanueva, and Sheyla Alvarado.

This festival concludes the “Guanajuato ¡Si Sabe!” season, a nine-week program that took place in 24 municipalities, with 27 events and generated an economic impact of more than 100 million pesos, resources that went directly to service providers, traditional chefs, local producers, hoteliers, and restaurateurs in different regions of Guanajuato.


The Endemic Festival alone will attract more than 30,000 visitors, with hotel occupancy projected at 70 to 80 percent.
The endemic ingredients of Guanajuato, the heart of the festival, will be present, such as: xoconostle, escamoles, garambullo, mesquite, tequila, mezcal, wine, and cajeta

Each of these elements will be reinterpreted through paired dinners that express the richness and biodiversity of the Guanajuatense territory, always in dialogue with the technique, creativity, and identity of chefs, because Guanajuato ¡Si Sabe!
