Gastronomy in Guanajuato is prepared with love, feeling and history; and so it was demonstrated by Luis Enrique Luevano Yañez, born in Acambaro and the Executive Chef in the Nuut Grill Restaurant in Queretaro, who won the first place of the 6th Cook of Guanajuato Contest.
The call to the contest
This year the Secretary of Tourism of Guanajuato made the call to the contest and 35 recipes of chefs were registered to participate and there was also one recipe of a traditional cook, the recipes were revised by well known chefs from April to June.
Then there were 12 finalists, and they competed for the 3 first places preparing their dishes in the kitchen of ICON University on October 21st and 22nd. The 1st place won a kitchen kit, a recipe book and he will be the speaker of the gastronomy in activities related with gastronomy in Guanajuato.
Dishes with history
Luevano Yañez fascinated the jury with dishes that represent a part of his infancy, “I love the corundas and for my birthday I would ask for corundas with tomato and purslane broth, and I transformed this dish for my first course”.
Hunt to cook
The second course of the winning chef was based in the teachings of his father.
“When I was very young my father taught me to go hunting and whatever we hunt we would cook; in the end we would have a lot of rabbit, but it would cook dry and hard and in this contest I cooked it at slow heat so that it kept the juice and I added a traditional mole the way they cook it in my hometown”, said Luis Enrique.
A delicious dessert
The chef’s grandma was honored in the third course, the dessert. “My grandmother loved the “buñuelo on the knee” with brown sugar honey and pumpkin candy, and preparing it brought me many beautiful memories of her and I wanted to share it”.
In these three course the feelings were much present and the chef from Acambaro called them: “Birthday Huarache, Guadalupe Rabbit and home-made bunuelo.
The dishes convinced the chefs in the jury as the Secretary of Tourism thanked the participants and the jury for making posible another edition of “Cocinero de Guanajuato”.
