In Guanajuato, culinary history is honored and the soul is caressed with the diverse ingredients and flavors that emanate from each dish prepared by traditional cooks.

Juan Jose Alvarez Brunel, Secretary of Tourism of the State of Guanajuato, presented the 11th. Traditional Cuisine Encounter to be held on November 4th and 5th, from 11 in the morning to 7 at night, at the Velaria de la Feria in Leon.

The “Traditional Cuisine Encounter” is an event that has strengthened since 2013 the Public Policy of “Guanajuato ¡Sí Sabe!”, highlighting each of the cooks who preserve, disseminate and promote the culinary heritage of the 46 municipalities of Guanajuato.

Traditional Guanajuato Gastronomy, Intangible Cultural Heritage, “is worthy of praise; therefore, this event will be focused on this heritage. Giving this value, from SECTUR we promote the gastronomic segment and attract people who seek to eat well,” said the Secretary of Tourism.

Prior to the 11th Traditional Cuisine Encounter, three preliminaries were held in the South, Center and North of the State where chefs participated and were able to coexist with each participating chef to learn about the culinary proposals of the chefs.

Participants in the preliminaries competed in the categories of:

  • Sweet Dish Recipe
  • Salty Dish Recipe
  • Traditional Drink

The organizing committee formed a selection of a qualifying jury made up of specialists and professionals in the fields of gastronomy, tourism, sociology, and marketing.

The jurors are:

  • Felipe Gomez, executive chef of the Hotsson Hotels chain
  • Jose Eduardo Vidaurri and Jesus Cardenas, from the Conservatory of Mexican Gastronomic Culture
  • Berenice Sainz, executive chef of Bixa Restaurant

The Top Chefs of Guanajuato: David Quevedo, chef of the San Miguel vineyard in Comonfort; Karen Valadez, chef of the Valadez Guanajuato Capital group; and Emilio Villasenor chef of the Cocinoteca in Leon

In the presentation of the Encounter, Alvarez Brunel unveiled the award that will be of utmost importance for cooks of the State who participated in the preliminaries and it will award the first place for savory dish, first place for sweet dish and first place for traditional drink and the winner will take home the trophy.

This award is called “KÜHI” which, in the Otomi language, is used to refer to the fact that the food is tasty and represents the union of the traditions of our State with the representation among other of the ‘Torito’ dance, where the traditional cook delicateness, love and passion for traditional gastronomy sustains the courage and bravery that characterize the endemic ingredients and gastronomy of our State.

“If someone wants to get to know Guanajuato, they should try the traditional cuisine and, I am sure, they will love Guanajuato. We invite you to this Encounter that will leave your stomach and heart full. Cooking is a day of celebration”, said Lulu Camarena, a traditional cook from Manuel Doblado.

During the Meeting, attendees will enjoy the diverse gastronomy of Guanajuato, but also workshops, and artistic and cultural program, local products and a sauce market.
