Students from the Higher Technological Institute of Purisima del Rincon won a silver medal in the Infomatrix Ecuador South America 2026 international competition thanks to their project “Tomatiztli”, a food innovation proposal that seeks to offer healthier and more sustainable alternatives for daily consumption.
The Tomatiztli project consists of the development of a functional toast made with oat and chickpea flours, enriched with dehydrated tomato and cooked by air frying, which allows obtaining an oil-free food, with high nutritional value and aimed at consumers looking for healthier options.
The gathering brought together more than 70 education institutions from different countries of the American continent, in Ecuador, where the projects were evaluated by specialists based on their scientific impact, level of innovation, viability and social contribution.
In addition to its nutritional contribution, the proposal integrates a food innovation and circular economy approach, by taking advantage of ingredients with high nutritional value and promoting more environmentally responsible production processes, combining science, flavor and sustainability.
The students who developed the project are Nesli Sanjuana Reyna Guerrero, Lesly Jimena Leon Gonzalez and Giovana Yazmin Gutierrez Gordillo, who represented the Instituto Tecnologico Superior de Purisima del Rincon and managed to position their research among the best in the international competition.
Jose Ricardo Narvaez Ramirez, of the General Directors office, expressed his pride in the result obtained and recognized the talent, dedication and teamwork of the students and their advisor, noting that their participation demonstrates that the research and innovation generated at Tec Purisima can transcend borders and contribute solutions to current challenges.
With this achievement, the Higher Technological Institute of Purisima del Rincon reaffirms its commitment to the training of young researchers able to develop projects with scientific, social and global impact, consolidating the university talent of Guanajuato in international scenarios.
