Cooks from 11 municipalities participated in the celebration of Guanajuatense flavors

A mole from Acambaro with turkey as protein was the highlight of the Second Preliminary of the 13th Guanajuato Traditional Cuisine Meeting ¡Si Sabe! 2025, held at the Parador Gastro-Artesanal in Yuriria.

The event is a platform that celebrates Guanajuato ‘s culinary legacy and strengthens the culinary identity of its regions. On this occasion, 17 traditional cooks from the municipalities of Yuriria, Jaral del Progreso, Salvatierra, Tarimoro, Acambaro, Jerecuaro, Apaseo el Alto, Uriangato, Santiago Maravatio, Villagran, and Tarandacuao participated, presenting emblematic dishes that have been preserved for generations.

The panel of judges awarded first place to Carolina Gutierrez Ramirez, a traditional cook from the municipality of Acambaro, for her mole with turkey, a recipe inherited from her grandmother that represents the flavors, techniques, and ancestral knowledge of the southern part of Guanajuato. Her dish will qualify for the grand event in Leon, where the most representative of traditional Guanajuato cuisine will be chosen.

Other dishes that stood out included the uchepos with green sauce from Tarimoro, the Jaral del Progreso-style beef barbacoa, the almond mole from Yuriria, and the chard tamales with cheese from Tarandacuao.

During the event, authorities such as the mayor of Yuriria, Victoria Eugenia Ramirez Zavala, and representatives of the State’s tourism sector reaffirmed their commitment to strengthening traditional cuisine as a driver of local identity and economic development.

The event included the presence of traditional chef Graciela Trujillo, winner of the 2023 and 2024 editions, who shared her experience as part of this competition.

The next preliminary rounds are on:

  • May 4th at the Parador Corralejo in Penjamo
  • May 18th at the Escuela Modelo in Mineral de Pozos, San Luis de la Paz
  • The grand final will be held on May 31st and June 1st in the MX District of Leon
